Shane was born and raised in Sacramento and is a graduate of Le Cordon Bleu Culinary Program at the California Culinary Academy in San Francisco. After completing his externship at Napa Valley Grille in Yountville, he was offered a permanent position with the restaurant. At the age of 22, he became the youngest sous chef in the Grille’s history. In addition, Shane held the position of Sous Chef of Blackhawk Grille in Danville and worked at the Michelin-starred Etoîle Restaurant, located at the famed Domain Chandon Winery in Yountville. In 2008 Shane helped open Zinnia in San Francisco. Shane then spent three years as Executive Chef of Amber Bistro in Danville, CA, before moving into his current role as Chef de Cuisine of the Lone Eagle Grille. Shane's dishes begin with internationally inspired ingredients from around the world combined to create flavors inspired by changing seasons and local cuisines. He sets out each day to find the best and freshest ingredients possible. Using modern preparation techniques and in keeping with his youthful energy, Shane has fun in the kitchen creating innovative and playful high Sierra cuisine.
Matthew is originally from Redding, California and is a graduate of the California State University, Chico. Over the last decade, Matthew has worked in the food & beverage industry in many different capacities. While attending school at Chico State, he started out as a cook and eventually worked at three different restaurants as a busser and server. He has held several positions at the Hyatt Regency Lake Tahoe including supervising Sierra Café and managing Cutthroat’s Saloon and the Casino bar. Matthew enjoys working with the Chef de Cuisine and fellow associates to enhance the guest experience while dining in Lone Eagle Grille. When he is not at the restaurant, you can find Matthew out in his kayak on the lake, or enjoying time with his wife and three young boys.
